Home-made Carrot Cake with Cream Cheese Icing

Today Joyce came over to help me bake Mom's birthday cake!

Mom wanted both a carrot cake and a cheese cake, so I made her carrot cake with extra cream cheese icing - double layered too! (:

Kwok's hard work hahaha after shredding 1+ packets of carrots!

2 cups worth!

Sultanas, walnuts, carrots.



Cinnamon, ginger, all-spice, etc.

My trusty kitchen-aid!

K it looks quite gross before it gets baked lol.

While waiting for it, I had my favourite snack:  Chips and salsa! :DLoooove Mexican food!

Oh and when I went out to get the cake box, I got myself a new phone cover! Cute hor hehehe.
